How do you heat the Pizzori pizza steel?
Insert into the oven 45 min. prior to launching your first pizza and set the oven to your max temperature.
This allows the Pizzori® to heat up, and when you launch your pizza on your dough will get a blast of heat that sustains and cooks a nice, crusty bottom.
Do I pre-season the Pizzori® pizza steel?
Yes and no. It comes pre-seasoned, but as with everything it’s advised to give it a quick rinse, scrub and add some regular oil (your Pizzori® comes with a guide for this).
Ideal oven temperature?
As high as it can go, but you generally need at least 450 degrees to make a good pizza.
It's made of cast iron, so it can go up to 1,200 degrees.
Placement of pizza steel in Oven?
Place centered in the oven ideally on the second highest rack.
What about a grill?
While heating up place all broilers on full. When cooking the pizza turn off broilers right below the Pizzori® steel to avoid burning the bottom of your pizza.
What setting should the oven be?
This depends on your preference. Some prefer to blast the pizza with the broiler reducing cooking time to 3-4 minutes, but leaving the crust soft.
Others (like me) prefers to use the bake setting and have a longer cooktime, but a more crunchy crust.
Roast is the least preferred due to the heat cycles.
Will it fit my grill / BBQ?
The Pizzori® is 14" by 14", so it fits on most rectangle grills.
If you have a round grill, it needs to be at at 20" to fit.
Is it steel or cast iron?
The Pizzori® is made of cast iron. It has the same effect as metal/steel, but with the added ability of a unique design and built-in handles.
