What are the benefits of using a perforated pizza peel?
Due to less surface area, then there is less surface for the dough to stick to.
It seems counterintuitive, but the results are pretty significant.
In addition, it allows you to use more flour on the bottom of your dough, but still allow the dough to release the flour before transferring to the oven.
How does a perforated peel affect the cooking process?
It doesn't directly.
The main benefit of a perforated pizza peel is less sticking, and less flour stuck to your dough.
The less flour stuck to your dough, the better your pizza will be.
Can a perforated peel handle heavy or loaded pizzas?
There is no difference in ability to handle weight between a solid or perforated peel.
It can easily handle even fully loaded pizzas.
